Valpolicella Classico Superiore DOC Farina
Farina's Valpolicella Classico Superiore DOC is a precious red wine that transmits the authentic soul, the aromas and flavours of Valpolicella Classica, thanks to a blend of native grapes grown in the town of San Pietro in Cariano: 45% Corvina, 20% Corvinone, 25% Rondinella, 5% Molinara, 5% Dindarella. It receives the appellation of "Superiore" because it comes from grapes with a higher alcohol content and follows at least 1 year of maturation. This allows to give the wine body and structure, but also greater roundness and elegance. The grapes are harvested by hand after a slight overripe. The winemaking process proceed with crushing, destemming and subsequent fermentation with selected yeasts at 28 °C. Lastly, pumping over alternates with délestage, in order to reach the perfect extraction and the ideal body, without removing freshness. The obtained wine is refined in Slavonian oak barrels and subsequently in the bottle.
Bright ruby red colour. The nose is very fruity and delicate, with hints of sour-cherry and raspberry, red fruits and sweet almond. On the palate it is dry, but velvety and well balanced, with a pleasant overcooked and enchanting fruit hints. We suggest serving it at a temperature of 16-18 °C.
