Valpolicella Ripasso DOC Superiore Torre D'Orti
Torre d'Orti's Ripasso is a red wine born from the traditional technique of "ripasso": the grapes ferment twice and the second fermentation involves fresh grapes on the pomace of Recioto or Amarone musts, which are obtained instead from dried grapes. After a first fermentation, the fresh grapes of Corvina, Corvinone and Rondinella are placed to re-ferment in contact with the dried marc (about 40% of the total grapes) for 48-72 hours. Finally, the aging takes place in small and medium oak barrels.
The fruity notes and the softness of this wine are due to fresh grapes, which combines perfeclty with the complexity, the strength and the spicy notes of the dried grapes. On the nose, the classic aromas of Amarone come to life, rich in intense notes of cherry, plum, sour-cherry and blackberries, as well as cinnamon and licorice. The palate is surprising, dry and very soft, elegant in tannins and balanced. We suggest serving it at a temperature of 18-20 °C.
