Valpolicella Ripasso Classico Superiore Tommasi
Ripasso Valpolicella Classico Superiore DOCG of Tommasi winery is born from the dried grapes used for the production of the Amarone. Immediately after fermentation, the best selection of Valpolicella grapes referment on the warm grape skins from which the Tommasi Amarone has been ferments. This process, used only in rare vintage years, imparts the richness of character and personality of a great wine to an already superior wine.
Made from Corvina Veronese 70%, Rondinella 25% and Corvinone 5% grapes, this Valpolicella Ripasso ferments in steel barrels for about 9 days and referments on the Amarone grape skins with the method “Ripasso”, then refinig 15 months in Slavonian Oak barrels of 65 hectoliters.
From the intense ruby red colour, Tommasi Ripasso della Valpolicella is rich and spicy, with notes of black pepper and scones of passionate grapes. On the palate it turns out full-bodied, very intense, spicy and fruity, with ripe cherry notes. Fresh and persistent, with soft and silky tannins. We recommend serving it at a temperature of 16-18 °C.
