Sacer Montefalco Sagrantino DOCG
Sacer Montefalco Sagrantino DOCG by Còlpetrone winery is a great example of Sagrantino di Montefalco, obtained from a careful selection of the best grapes in the best vineyard plots of the Còlpetrone estate, chosen for their exposure and soil type. The grapes are harvested by hand and selected in the vineyard before being fermented with maceration in steel for 15 days at a controlled temperature of 24-28 °C, with daily pumpings over and délestages. At the end of the alcoholic fermentation, the maceration process continues at 29 °C. After racking, the wine is ready for ageing in French oak barrels for 12 months on its own fine lees, carrying out malolactic fermentation through weekly batonnages. It refines in the bottle for another 12 months before realese.
Sacer is fruit of the experience gained over years in the Còlpetrone estate, where Sagrantino grapes express their unrepeatable organoleptic characteristics, thanks to a very special terroir. The exposure and the microclimate do the rest, obtaining an extremely rich wine, with an intense colour, fine aromas of red fruits, spices and leather. The flavour is rich, well-structured, with an evident tannic concentration, which represents a clear expression of the territory of origin. This selection is a true masterpiece of the winery and it is produced only in the best vintages. Its aging potential is estimated up to 10-15 years. We suggest serving it at a temperature of 18 °C in large glasses.
