Capitel Nicalò Valpolicella DOC Superiore
Capitel Nicalò Valpolicella DOC Superiore by Tedeschi winery is made from red grape varieties grown on the Moraine Hills in the heart of Valpolicella: 30% Corvina, 30% Corvinone, 30% Rondinella, 10% Rossignola, Oseleta, Negrara, Dindarella. Grape harvest takes place at the end of September/beginning of October and after harvesting, the bounces dry in fruit storage structure for 1 month. The winemaking process proceed, alcoholic fermentation and maceration for 14 days at a temperature of 28 °C.
The obtained wine ages in Slavonian oak barrel for about 1 year, before being bottled for other 6 months of ageing.
Ruby red colour, clear and transparent. The bouquet is intense and elegant: fruity aroma (currants, black cherries) with spicy notes of vanilla and tobacco because of the Slavonian oak. In the mouth it shows good body, good structure, lively acidity and alcohol content well balanced with tannins. The after taste confirms the notes in the bouquet. A complex and elegant wine. This Valpolicella DOC Superiore is suited for ageing for 7-10 years. We recommend serving it at a temperature of 16 °C.
