La Roggia Recioto Classico DOCG BIO
"La Roggia" is a very fine example of Recioto, the famous passito wine from Valpolicella. Refined and seductive, this sweet wine is made from 70% Corvina Veronese and 30% Rondinella grapes, manually selected during the first weeks of October. The name "La Roggia" derives from the name of Speri's vineyard, located inside Villa Giona - a historic Renaissance palace - on the southeastern slope of Monte Sausto, in the municipality of San Pietro in Cariano.
After a drying of 110 days in fruit-drying rooms with ideal conditions in terms of temperature, humidity and ventilation, the grapes loose 44% of their initial weight with a considerable increase in the quantity of sugar. They are pressed and destimmed before macerating in stainless steel tanks at 18 °C for a period of 25 days, with periodic pumping over. Skins are separeted and the wines is trasferred into 500 liter casks, with repeated decanting in order to obtain adequate cleaning of base. The whole process takes place cold in the cellars to encourage the spontaneous halting of fermentation. Ageing in barriques for 24 months and refinement in the bottle.
La Roggia Recioto della Valpolicella has garnet-red colour. On the nose, hints of raisin, violet and jam. On the palate it is warm and velvety, intense and full. We suggest serving it at a temperature of 16 °C.

This sweet wine goes very well with desserts, especially with dry pastries. Also suitable with dried fruit, chocolate and paired with blue cheeses. It is an excellent meditation wine, drunk in reflection.
