Sauvignon Friuli DOC Scarbolo
Scarbolo's Sauvignon Blanc is a pure Sauvignon white wine, whose grapes are grown in "Lara" and "Camposanto" vineyards owned by the winery. In Friuli, thanks to the particular microclimate, to the complexity of the soil and to an excellent interpretation of the variety, it is produced an unmistakable, fresh and pleasant Sauvignon Blanc. After a careful manual harvesting, 50% of the whole grapes is softly pressed, while the other half is destemmed and after a few hours of cold maceration with the skins, it is gently pressed. Fermentation takes place with the help of selected yeasts, at a controlled temperature in stainless steel tanks. The wine refines in the same fermentation containers on the fine deposit with frequent bâtonnages.
At the glass this Sauvignon Blanc shows a beautiful straw yellow colour. On the nose it expresses tropical fruity parfumes, characterized by melon, passion fruit, combined with vegetable and aromatic aromas of nettle, sage and tomato leaves. In the mouth it expresses pleasant softness and freshness, which are well balanced by good structure. Long finish with hints of tropical fruits. We suggest serving it at a temperature of 12 °C.

Scarbolo's Sauvignon is an excellent white wine to sip alone and during the meal and at the table, paired with raw fish, soups, asparagus, omelettes with herbs and with fresh dishes in general. Perfect with ham and melon.
