Gavi DOCG BIO
Gavi DOCG of the biodynamic winery Raia identifies Cortese's grape variety from which it comes. After careful selection, the grapes are de-stemmed for a soft pressing and the obtained must undergoes natural decantation and fermentaion in stainless steel tanks. Alcoholic fermentation is caried out at a controlled temperature of 18 ° C for about 10-15 days. The wine is left on native yeasts lasts for about 3-4 months, then it is cold-stabilized before bottling. This process allows you to have a fresh and ready to drink wine.
This wine is BIODYNAMIC and the winery has obtained Demeter certification in 2007.
Straw yellow colour with greenish hints. This wine offers a particularly fine mineral feeling and notes of fruit and white flowers. The mouthfeel is lively, balanced, with a fresh acidity, which increases its persistence and favours its drinkability. A slightly almondish finish. We suggest to serve it at 11-13 °C.
FOOD MATCHING SUGGESTIONS
La Raia's Gavi is excellent as aperitif, and as accompaniment of hors d’oeuvres and of fish and vegetable-first courses. It is the perfect match also for seafood, white meat and fresh young cheese.
