METODO CLASSICO SPARKLING WINES

What does “Metodo Classico” mean? Metodo Classico or Traditional Method is the Italian process used to produce sparkling wines. It is also called "Méthode Champenoise" as it reflects the same procedure used for the French Champagne. The most famous Italian Metodo Classico sparkling wines are Trentodoc and Franciacorta DOCG. The Metodo Classico sparkling wines are subjected to a second fermentation in the bottle - unlike Prosecco which ferments only once in autoclave. The second fermentation is usually followed by a period of more or less long aging (from a few months to over 3 years) on the yeasts and in the same bottle, placed on special racks called “pupitres”. Then, the sugary residue that derives from the second fermentation is calibrated with the addition of liqueur d'expedition (a more or less sugary liquid mixture that represents the secret stylistic hallmark of each sparkling wineries) after dégorgement (ie after separating the sparkling wine from the refermentation yeasts) and before final bottling. Depending on the sugar dosage that will result in the sparkling wine, you will get a sparkling Pas-dosé or Brut-Nature or Dosaggio Zero (<3 g / l), Extra Brut (≤6 g / l), Brut, (<12 g / l), Extra Dry (12-17 g / l), Dry (17-32 g / l), Demi Sec or Semi-Dry or Abboccato (32-50 g / l), Doux or Dolce (> 50 g / l). Usually for the production of sparkling wines are used grapes of different vintages, but if they come from the same vintage, the sparkling wine is called "Millesimato", where by vintage is meant the harvest vintage of the grapes. The year of disgorging, however, informs about when the bottle has been placed on the market and its presence, especially in non-vintage sparkling wines, is an indication of seriousness on the part of the producer.
