Palás Barolo DOCG
Palás Barolo DOCG is a traditional Barolo produced by the famous Piedmontese winery called Michele Chiarlo. The Nebbiolo grapes which composed thi Barolo come from the municipalities of Verduno and La Morra, where the soils are of Tortonian origin, characterized by a greater presence of silt and sand, and by Monforte d'Alba, where the Elvezian origin soils provide a more clayey-calcareous marl and tufa soil. After a manual harvest, the grapes arrive in the cellar for the winemaking process in steel tanks. Maceration is carried out in contact with the skins and soft wetting of the cap through the "shower" system at a temperature between 32 and 27 °C for about 13-14 days. After malolactic fermentation in steel, the obtained wine is aged for a minimum of 3 years: 2 years in large barrels and 1 in the bottle.
This Barolo has a garnet red colour with brilliant hues. The nose is ethereal and balsamic, rather rich and complex. Notes of small red and black fruits emerge, combined with aromas of licorice and tobacco. On the palate it is very ample, harmonious and undoubtedly aristocratic, with an excellent tannic texture, which is silky and well integrated with the powerful structure. We suggest serving this bottle taking care to uncork it at least half an hour before serving, at a temperature of 17-18 °C.
