Pecorello Calabria IGT
Pecorello is an ancient Calabrian native grape variety that Ippolito winery has been able to rediscover and enhance, creating a white Calabrian wine from 100% Pecorello grapes, proud of an enthusiastic wine research on its territory.
The harvest is manual and it is carried out in the first days of September. After cold static settling, the must passes to the fermentation process, in stainless steel tanks at controlled temperature. The wine is aged in steel until the end of January.
Brilliant straw yellow colour with green reflections. Varied nose, with fruity aromas such as white peach and then wisteria, freshly cut grass and field flowers, ending with elegant minerals and salty nuances. The palate is vibrant, balanced and fresh, with long-lasting finish. We recommend serving it at a temperature of 10-12 °C.
FOOD MATCHING SUGGESTIONS
Pecorello pairs with spiced vegetables and fish. Try it with seafood risotto or white meat, as well as savory pies.
Era il 1845 quando Vincenzo Ippolito impresse le proprie iniziali sul casolare di campagna nella marina di Cirò tra vigneti, uliveti ed aranceti. In un’agricoltura molto variegata, la vite inizia ad avere un ruolo importante, benché il consumo del vino fosse prettamente locale.
