Cabernet Sauvignon Venezia DOC
Cabernet Sauvignon is an international red grape that is expressed with great elegance in Veneto. This version of Cabernet produced by De Stefani winery comes from the Piave area and the grapes come from old vines grown in clay soils, which reach a natural balance of ripeness at the time of harvest. The harvest is carried out at the end of September with fully ripe grapes, in order to reach a high coloring and aromatic heritage of the berries. After destemming and crushing, it follow maceration and fermentation at controlled temperatures, with frequent pumping overs. The wine completes its alcoholic fermentation in stainless steel tanks and it ages in barriques and in oak barrels for 8-12 months on its own yeasts.
De Stefani's Cabernet Sauvignon has an intense ruby red colour, with fruity aromas of ripe red-berry fruit, harmonious taste. It is full-bodied, rightly tannic, with pleasant notes of wild berries. We suggest serving it at a temperature of 16-18 °C. Its complex structure lets it improving during maturation in the bottle, which can last up to 15 years, reaching its qualitative peak after 10 years from the harvest.

De Stefani's Venezia DOC Cabernet Sauvignon is a red wine that pairs well with red meats, especially braised and roasted meat. Also excellent with a traditional Bolognese tagliatelle with meat sauce, pasta and beans, pumpkin risotto and Treviso radicchio.

The De Stefani family originates in Refrontolo, a little hilly village in Veneto Italy, as results in official documents of 1624. In the second half of 1800 Valeriano De Stefani, the founder, individualized the best soil where to produce wines with rare personality in the Colvendrame estate in Refrontolo, on the hills between Conegliano and Valdobbiadene, north of Venice.
His son Valeriano, second generation, inspired by his careful wife Angelina, began the tradition which the De Stefanis have always adhered: total devotion to quality with no compromise.
