Brùt Franciacorta DOCG Brut
At the end of August and early September, the grape is ready to be harvested and brought immediately to soft press. There follows a cold static decantation and inoculation with selected yeasts. After fermentation in steel, the winemaking process passes to partial malolactic fermentation. The first aging lasts 7 months, part in steel and part in barriques, while second fermentation on the yeasts lasts from 20 to 26 months. It is a brilliant and fragile brut, which prefers smoothness and accessible sensory language, a balanced and versatile style.
The glass has a straw yellow colour with greenish undertones, animated by a fine and persistent perlage. The nose is fresh, with lime floral notes, citrus, white peach and green pepper scents. The mouth is tense and crispy, fresh and vertical taste, with fine and prolonged veins, closing in the very enjoyable finish. We recommend serving it at a temperature of 8-10 °C.
