Olmaia Sant'Antimo Cabernet BIO DOC
This wine is dedicated to the innovative spirit and vision of Count Alberto Marone Cinzano when he planted Cabernet Sauvignon in the early 1980’s on the hills of Montalcino. This wine is the pure expression of the best known grape variety in the world married with the climate of our very unique “terroir”. In the glass you will find all the intensity of the dry and hot Mediterranean summer and if you close your eyes, you might even be able to hear the crickets singing in the background. Fermentation in 50 hl stainless steel tanks. About 20 days of maceration at controlled temperature of 25-28 °C. 18 months in medium toast French oak barrels (95%) and American oak barrels (5%). After bottling the wine was aged for further 8 months before release.
Deep ruby red with shining purple reflexes. Intense, powerful and elegant. The fruity notes, typical of Cabernet Sauvignon together with the oaky spicy aromas express the elegance and the complexity of this wine.
Ripe and fleshy wine with a great structure. The tannins are soft and pleasant perfectly combined with the classic notes of the oak. The aftertaste is long persistent and savoury. We suggest to serve it at 18 °C.
FOOD MATCHING SUGGESTIONS
This Cabernet is very well matched with red meats, roasts and game, as well as medium-aged and aged cheeses.
Col d’Orcia is one of the oldest established wineries of Montalcino. The archaeological excavations show that the slopes of Orcia River were inhabited since the Etruscans, over 2500 years ago. Some olive trees among the Brunello vineyards prove all favourable conditions of Col d'Orcia’s climate and soil for growing grapes and olives.
