Cisiolo Franciacorta DOCG Dosaggio Zero by Villa Crespia winery is a Traditional Method sparkling wine made from Pinot Noir grapes cultivated in a single vineyard called "Il Cisiolo" among the 23 owned by the winery and located in the 6 areas that characterize the Franciacorta. Cisiolo for Villa Crespia is synonymous with challenge: to win the "difficult character" attributed to Pinot Noir, forcing it to offer itself to the most demanding palates without liqueur: once again the zero dosage confirms the choice of the winery who want to present the Franciacorta terroir in its most authentic expression.
The vineyard is located on a very clayey soil, poor in sediment, slightly acidic, particularly suited to the cultivation of Pinot Noir also because it is fertile and located in a cool area. The winemaking process is performed with the separation of 3 pressing fractions. The alcoholic fermentation takes place partly in steel, with selected yeasts at a temperature under 17 °C and partly (10-15%) in barriques and/or large barrels, followed by spontaneous malolactic fermentation. The wine matures partly in steel on the lees for 7-8 months and partly in oak for 6-12 months. Once bottled, second fermentation and refinement are carried out on the lees in bottle for at least 30 months.
Franciacorta Cisiolo is a Franciacorta from pure Pinot Nero grapes, characterized by a very fine perlage. Intense spicy and yeast, citrus and ripe fruit notes rise to the nose. This Franciacorta shows a decisive, enchanting character. We suggest serving the wine at a temperature of 6-8 °C.
