Description

Bio Etna Bianco DOC by Cantine Nicosia is an organic white wine of "Fondo Filara" line, that includes single-vineyard wines produced from the finest Sicilian grapes coming from the most suitable areas for their cultivation, from Etna, Vittoria, to eastern and western Sicily. Etna Bianco is a volcanic wine obtained from native 60% Carricante and 40% Catarratto grapes, grown at high altitude on the volcanic and lava soils of Etna. After the manual harvest, grapes are subjected to cold maceration for 24 hours and then they are softly pressed and undergo static decantation for about 48 hours. Fermentation is carried out at a controlled temperature between 13 and 15 °C for about 20-25 days, followed by ageing on fine lees in stainless steel tanks, a short passage in acacia tonneaux and a further refinement in the bottle for 3-4 months.

TASTING NOTES

Brilliant straw yellow colour. On the nose you can perceive delicious notes of apple, grapefruit, hawthorn and honey. In the mouth the wine is extraordinarily fresh; there is a slight return of mineral notes and tasty aftertaste of hazelnut, concluding with a hint of anise in the finish. We suggest serving it at a temperature of 10-12 °C.

FOOD MATCHING SUGGESTIONS

Etna Bianco DOC of Cantine Nicosia is an excellent organic white wine to pair with shellfish risotto, baked, grilled of fried fish, stuffed pumpkin flowers.

Cantine Nicosia was founded in 1898 by Francesco Nicosia, great-grandfather of the current owner, who opened a wine shop in Trecastagni, on the eastern side of Etna. Golden times for the Etna wine, that was already known and appreciated throughout Europe for its mineral strength and its "volcanic" personality.
