Baffonero Merlot Toscana DOC
Baffonero takes its name from the homonymous Baffonero vineyard, one of the first to be planted in Rocca di Frassinello, the winery born as a "joint-venture" project between Castellare di Castellina and Domaines Baron de Rothschild-Lafite, the most famous Château in the world. The Baffonero vineyard is located at the foot of the winery designed by Renzo Piano, with a perfect exposure. It is a vineyard planted with a single variety: its majesty the Merlot. Baffonero is a wine that explains the essence of uncompromising quality, a few bottles of a great 100% Merlot - well-known all over the world.
The harvest usually takes place in the first half of September. The grapes are subject to wine making process in cement tanks for about 15 days at a controlled temperature of 27 °C, then age in 100% new French oak barrels for about 14 months, followed by another 12 months of aging in the bottle.
Intense ruby red colour. The nose is fruity with a variety of black fruits, especially blackberry, blueberry mixed together with a slight hint of vanilla. In the glass the aromatic component changes, evolving towards tobacco, chocolate and smooth coffee scents. In the mouth the wine is complex, full and vigorous, with a freshness that makes it long and pleasant. We suggest serving it at a temperature of 16-18 °C.
FOOD MATCHING SUGGESTIONS
