Valpolicella DOC Superiore Allegrini
Valpolicella Superiore DOC by Allegrini winery is born at Fumane di Valpolicella, a hilly area that hosts vines that give birth to a surprisingly unmarked wine. The very varied soil, mostly clayey and limestone, with old and new plants cultivated through the pergola or simple guyot method. Valpolicella's fermentation takes place in stainless steel tanks at controlled temperature for 9 days, followed by steel refinement until February and last two months in the bottle.
Ruby red colour with glints of purple, it has a fragrant fruity nose dominated by cherries with echoes of fresh pepper and aromatic herbs, the heritage of Corvina and Corvinone, the denomination’s historical grapes. If it is striking for its crispy juicy flavour when drunk young, a few years of ageing mellows it. We recommend serving it at a temperature of 16-18 °C.
This special type of Valpolicella goes well with Italian starters, soups, pasta dishes and, generally speaking, most anything from the Mediterranean cuisine. It pairs well with roasted or grilled white meat and is also ideal as a summer red to go with seafood.
