Truffle Wine Pairing

Wine and Truffle is one of the most widespread and discussed Autumn wine and food pairing, given the seasonality of this mushroom. One of the features that distinguishes truffles is the intense fragrance, as much as the intense taste, releasing aromas that recall the undergrowth vegetation, toasted hazelnut essences. Black truffle give their best with delicate cooking, generally enriching the dishes. White truffle, unlike its black brother, is rich, opulent, almost haughty in its exuberance: you don't have to cook it, but just add it on simple dishes, such as fried eggs, tagliolini pasta or enriching red meat fillet or tartares. All dishes that leave the scene to him. The general rule is not to cover the taste of the precious truffle, avoiding wines that are too aromatic or too acidic. The "traditional" pairing is in Piedmontese style, with truffles and Nebbiolo on the table, and in general soft, mature, perfumed reds with a not too tannic structure. For lovers of white, a valid option is a Riesling, which with its fine minerality accompanies the scent of, for example, the Piedmontese tajarin. Let's not forget the bubbles or rather, an excellent Brut Traditional Method spakling wine, which will go well with a salad of mushrooms and truffles.
