Castel de Paolis

The winemaking tradition of the Santarelli family dates back to the early seventies, when the family acquired small plots of land almost completely planted with vines. Until the mid-eighties, the grapes produced in the vineyards of Grottaferrata were conferred to the local wineries, while in 1985, after a meeting between Giulio Santarelli with the General Director of the Agricultural Institute of S. Michele all'Adige in the Province of Trento, Castel de Paolis winery starts its own production of great Lazio wines, in an area certainly more suited to the region and to the whole of Italy, or the Roman Castles and in particular Grottaferrata. With its 270 meters above sea level, the right distance from the coast of the Tyrrhenian Sea and its volcanic soil combined with one of the mildest and most pleasant climate in Italy, this area of ​​Lazio is a real unicum in the field of the viticultural vocation of a territory.

After the first experimental harvest in 1988, the vines were chosen to be replanted on the entire farm vineyards, covering a total of 14 hectares and 1993 was the year of the first harvest of Castel de Paolis wines. Passion for the great wines and continuous research aimed at the constant improvement of the wine art are the main points of the Castel de Paoli's philosophy, as well as produce prestigious wines of great personality and strongly linked to an incomparable land, fruit of a wise winemaking tradition and innovative technological solutions.
