Guiry Sangiovese Rubicone IGT BIO
Guiry is 100% biodynamic Sangiovese from Romagna, produced by the Tenuta Mara winery on the hills of San Clemente, not far from Rimini. After a manual harvest in 12kg boxes which is usually carried out in the second half of September, Sangiovese grapes arrive to the cellar for manual selection and sorting. By fall, all grapes reach the conical oak vats: without temperature control and without the addition of selected yeasts, the must concludes its fermentation and macerates on the skins for about 1 month. The wine evolves on its fine lees for 12 months in French oak barrels and small cement vats. It completes its refinement in the bottle for the next 6 months.
Guiry has a medium intense ruby-red colour, very clear tending to transparent. On the nose, the aromas are reminiscent of delicate floral notes of broom and roses, as well as fruity essences of raspberry, blackberry and black cherry, on a surprising spicy background of star anise and ginger. In the mouth it is soft, moderately fresh. The tannins are soft, making the sip pleasantly balanced. The finish offers highly appreciated menthol notes. We suggest serving it at a temperature of 15-16 °C.

Guiry Sangiovese Rubicone IGT from Tenuta Mara is an excellent red wine to pair with everyday meals, preferring first courses of pasta, like a simple tagliatella with ragù, as well as cold cuts and cheese typical of the Romagna tradition.

We had a clear idea of how the area that would accommodate the Tenuta Mara should be. On the Adriatic coast, at 200 km South of Venice and 350 Km North of Rome close to the charming hill town San Clemente,on the Province of Rimini, we found what we had in mind. Minimize the interference of man, banish all that is not natural and stubbornly seek spontaneity. This is the non interventional Biodynamic method that we have decided to adopt. The grapes that grow at Tenuta Mara are untreated therefore healthy and genuine.
