Colle Vecchio Pecorino Offida DOCG
Colle Vecchio is one of the CRU labels of Tenuta Cocci Grifoni, an amazing 100% fresh and crunchy Pecorino white wine. Grapes are carefully harvested in the first ten days of September and they are selected directly in the vineyard. The vinification is in white, with maceration on ecotypical yeasts at a controlled temperature between 14 and 16 °C. The wine is refined in stainless steel for a minimum of 4-6 months and completes its aging in the bottle for at least 12 months.
Beautiful golden yellow colour with a slight greenish undertones. Great intensity and vivacity, crystalline and consistent nuances. At the first nose, the wine is intense: balsamic notes of aromatic herbs, eucalyptus, mint; then ripe yellow peach, citrus, bergamot aromas with a marked minerality complete the olfactory bouquet. In the mouth it is intense, persistent, without sagging; freshness and flavour in great synergy, to create balance with important but necessary alcohol. The finish is very long, with citrus and fresh sage tones. We suggest serving it fresh at 8-10 °C.
FOOD MATCHING SUGGESTIONS
Colle Vecchio Pecorino of Tenuta Cocci Grifoni is excellent with a cuisine based on fish. It also goes well with delicate dishes based on white meats and seasonal vegetables, flans and country omelettes. Excellent with appetizers or as a fresh aperitif.
