Shalai Pantelleria DOC Moscato Spumante Millesimato Demi-Sec
Shalai is a Demi-Sec Millesimato sparkling wine made from 100% Zibibbo grapes and produced by Vinisola winery in Pantelleria. It is a particular and unusual bubble; this is why it is such interesting. "Shalai" is a Sicilian dialectal expression that represents the sensation of intense satisfaction and deep pleasure; exactly what this sparkling wine gives. The harvest is manual and takes place towards the end of August and the first ten days of September. After destemming, the grapes macerates at a controlled temperature of between 20 and 24 °C for about 72 hours. It follows a soft pressing and first fermentation in steel and a second fermentation in autoclave through the Martinotti-Charmat method, which enhances the aromatic and fruity features of Zibibbo grape. The wine completes its refining always in autoclave for 6 months.
Shalai sparkling wine has a straw yellow colour. It is a bubble rich in the scents Pantelleria's sea and sun, with all the fragrances of Zibibbo: Mediterranean flowers, white peaches, citrus and sage. On the palate it is balanced and warm; since the first sip, it fills the heart and the senses of profound joy. Aromatic, savory sweet with full and persistent aftertaste and a pleasant finish of grilled pan. It is a wine with an aging capacity estimated up to 4 years. We suggest serving it fresh at 8 °C.
