Prova D'Autore Umbria IGT
Prova d'Autore is an Umbrian red wine produced by Roccafiore winery from a selection of the best 40% Sagrantino, 30% Montepulciano, 30% Sangiovese grapes, grown in the vineyards around Todi. The harvest is manual and begins towards the end of September for Sangiovese and Montepulciano and continues from mid-October for Sagrantino. After crushing, the grapes macerate on the skins for about 22-24 days. Fermentation takes place at a controlled temperature with natural yeasts in stainless steel tanks, followed by racking and soft pressing of the skins. The wine ages in new and second passage French barriques for about 24 months. After assembly and bottling, the wine matures further 6 months in the bottle.
Prova d'Autore shows a ruby red colour with dark garnet undertones. The perfect synergy and balance of these grape varieties give life to a harmonious, elegant wine with great taste-olfactory complexity. Ripe red fruits and pleasant spicy notes, in harmony with the delicate vanilla aromas conferred by aging woods. Mighty flavour, but also velvety and persistent at the same time. We suggest serving this wine at a temperature of 18-20 °C.
