Gavi DOCG Riserva BIO
La Raia Gavi DOCG Reserve represents the Piedmontese white winemaking tradition. Cortese grapes used for the production of this excellent white wine, thanks to its natural exposure, enjoy excellent microclimate. Moreover, being slightly overripe, they give a wine with complex olfactory notes of ripe fruits, honey and candied fruits.
The obtained must is decanted at low temperature, without the addition of oenological additives. Alcoholic fermentation takes place in small temperature-controlled stainless steel tanks. After about 25 days, at the end of fermentation, the wine is poured into another stainless steel tank, where it refines 6 months, before being bottled for further 6 months of ageing.
This wine is BIODYNAMIC and the winery obtained the Demeter certification in 2007.
Gavi Reserve has a more or less intense straw yellow color. Bouquet is fine and delicate, with floral hints typical of the Gavi area. In the mouth it is rich, dry, harmonic, and pleasant to the palate, savoury, with a persistent warm finish. Serve at a temperature of 10-12 ° C.
FOOD MATCHING SUGGESTIONS
The Gavi DOCG Reserve is excellent with seafood, above all with shellfish of which it brings out the par- ticular taste, and with light first courses and risotto. It is the perfect match also for fresh or semi-soft cheese.
