Prosecco Valdobbiadene Superiore Rive di Soligo DOCG Dosaggio Zero Millesimato
Conegliano Valdobbiadene Prosecco Superiore Rive di Soligo DOCG is a Prosecco wine produced by Biancavigna winery on the "rive", that is on the slopes of the steep hills that characterize the territory of Conegliano and Valdobbiadene and that represent the most suitable areas for Prosecco production. In the "Rive" zones, the production is reduced to 13t per hectare, the grapes are harvested exclusively by hand and the vintage is always indicated on the label. The grapes that make up this fine bubble come from the vineyards owned by the winery in San Gallo - Soligo, located at an altitude of 380 meters with a 70% gradient.
After a manual harvest in September, the vinification process provides for soft pressing of the grapes, with static decantation and fermentation at controlled temperatures. The wine is aged in stainless steel in contact with the fine lees and is refermented in autoclave at controlled temperatures with selected yeasts for about 100 days. It refines in the bottle for another 3 months.
This Zero Dosage Prosecco has a straw yellow colour with light green undertones. The perlage is fine and persistent and it anticipates the typical fruity aromas of Prosecco, recalling notes of pear, apple and white pulp fruits. In the mouth it is creamy, with an excellent taste-olfactory persistence and a marked mineral note. Very elegant and incredibly balanced. It is recommended to serve at a temperature of 6-8 °C in tulip crystal glasses to enhance the aromas and perlage.
