I Fiori Cannonau di Sardegna DOC
Cannonau is the main red grape of Sardinia. The DOC Cannonau is one of the most well-known. It's a flower that grows here in our vineyards... that's why the winemaker called "I Fiori" in range with the other classical traditinal wine varietarls of Sardinia. The flower on the label is a Aquilegia Nuragica, one of the two hundred endemic species of Sardinia, a symbol of its diversity. It grows in the Gorroppu canyon (Gennargentu National Park) and there are only ten plants left and protected.
This red wine is made from 100% Cannonau grapes, grown nearby "Is Crabilis" (Serdiana) and "Acquasassa" (Ussana). Once pressed, the grapes macerate with the addition of selected yeasts for about 6-7 days. After the maceration, fermentation continues under controlled temperature, followed by aging in cement and stainless steel for about six months, after which the wine is bottled for another 2/3 months in bottle.
Cannonau "i Fiori" has an intense ruby red colour with violet threads wines, very clear. The scent is fresh and immediate intense with nuances of ripe red fruit and vegetal notes. The wine shows soft, dry flavor with good structure and olfactory persistence.
FOOD MATCHING SUGGESTIONS
The ideal food matching for Cannonau "i Fiori" of Pala winery? It pairs well with cold cuts, first courses with tasty sauces, white and red meat not too fat, medium-aged cheese. We suggest to serve it at a temperature of 16-18 °C, uncorking the bottle at least 30 minutes before serving.
