Asolo Prosecco Superiore DOCG represents Montelvini's excellent sparkling winemaking ability. This particular wine is characterized by its originality in the Prosecco landscape. The most exacting discipline of the territory and limited production preserves its uniqueness and qualify it as a true gem waiting to be discovered. It is made from high-quality Glera grapes, which are harvested around mid-September and subjected to soft crushing, followed by cold static settling. Selected yeasts are added to the clarified must before carring out a slow fermentation in thermo-conditioned containers. After fermentation, the wine is filtered and stored, then re-fermented in an autoclave, with the addition of liquer de tirage, and once the refining process is completed, the wine undergoes isobaric filteration in a second autoclave and is then bottled.


It has a beautiful bright pale yellow colour. Lively, fine and persistent foam that enhances the soft and young fragrances. Ample and complex aromatic bouquet, balanced between fruity and floral notes. The taste is soft, velvety and at the same time dry, thanks to the balanced acid note. Harmonious and surprisingly fresh. We suggest serving it at a temperature of 6-8 °C.
