Monastero Cabernet Franc Vigneti delle Dolomiti IGT
Edmund Mach Foundation's "Monastero" Cabernet Franc is a red wine from Trentino Alto ADige, made exclusively from Cabernet Franc grapes, grown in the Tomasi vineyard, near the Foundation's Agricultural Institute. The harvest is manual and it is performed the third week of September is performed. After a traditional wine making process through 15-days maceration at 28 °C, the wine ages in French oak barrels for 15 months and the next 12 months in bottle.
Intense ruby red colour, wide and complex bouquet with hints of small red fruits and spices. In the mouth it is elegant, soft, with good balance and persistence. We suggest serving it at a temperature of 18-20 °C.
