Vivia Bianco Le Mortelle
Vivia wine of Le Mortelle (Antinori's family) is a white wine made frmo 50% Vermentino, 40% Viognier, 10% Ansonica grapes.
Alle grapes are harvested ripe, so as to preserve the fragrance of each variety. Afeter a fermentation in stainless steal at 16 °C, it follows a short period of aging in steel in contact with the lees (about 3 months) and aging in bottle (about 3 months).
Vivia wine shows intense aromas of peach, citrus zest, and candied fruit. It is soft on the palate but is well sustained by a crisp acidity which adds to its savor and length. We suggest to serve it at 8-10 °C.
FOOD MATCHING SUGGESTIONS
It is an ideal wine for aperitif. It also blends beautifully with raw fish carpaccios, sushi and sashimi, tuna and salmon fillets, octopus salad. It is also perfect to pair with summer vegetables dishes or freash and creamy cheeses.
The Antinori family has been involved in the production of wine for over six centuries, ever since, in 1385, Giovanni di Piero Antinori entered as a member, the “Arte Fiorentina”, the Winemakers’ Guild of the city of Florence. During this entire long period, thorough twenty six generations, the family has always directly managed this work with courageous and, at times, innovative decisions, but always maintaining, unaltered, a fundamental respect for tradition and for the territory in which they have operated.
