I Mori Gaglioppo Cabernet Calabria IGT
I Mori is a successful blend of one of the most ancient grape variety of Calabria, Gaglioppo, together with an international grape, Cabernet Sauvignon. Ippolito 1845 winery produces this great Calabrian red from 70% Gaglioppo and 30% Cabernet grapes, creating an original wine, with a soft taste. The grapes are harvested by hand in the second decade of October and they are traditionally vinified in thermo-controlled fermenters. The wine refines about 12 months in small French oak barrels, to soften the vigor of tannins.
I Mori has an intense ruby red colour with violet hues. The nose reveals a complex aromatic spectrum, consisting of ripe red fruits and spicies, such as vanilla and balsamic notes. Great structure in the mouth; it is soft, warm and well balanced. We suggest serving it at a temperature of 18 °C.
