Carjcanti Sicilia DOC BIO
Carricante is a rare native grape from Etna, widespread at the highest altitudes of the volcano and around Ragusa. When cultivated ad alberello this grape matures late. Late maturation is the key to producing important white wines of unexpected structure and longevity predominated by aromas of apple, orange blossom and anise with a typical taste and pleasant tartness.
Gulfi's Carjcanti is almost pure Carricante, which is blended with a small portion of Albanello grape, a Sicilian historical vine almost in danger of extinction. Both grapes that make up Carjcanti come from Vigna Campo vineyard, in Chiaramonte Gulfi area. Here the harvest takes place around the second half of September and, as for all Gulfi wines, it is done by hand. Grapes are vinified in white by direct pressing of whole and fermented clusters in steel and oak barrels of 500 and 2500 liters. The wine ages on its lees for at least 1 year in oak barrels of 2500 liters and 500 liters and steel, before refining several months in the bottle.
The yellow colour with bright green hues hides an intense, ample, characteristic aroma: hints of green apple, orange blossoms and anise. On the palate, the wine is dry, mineral, persistent, with a pleasant acid vein. It retains its organoleptic characteristics for many years, becoming softer and more complex. We suggest serving it at a temperature of 14 °C.

Thanks to its lively acidity, the ideal combination for Gulfi's Carjcanti includes elaborate fish dishes, shellfish and seafood. Intriguing also in combination to first courses based on pasta and risotto dishes made with tender fragrant vegetable, optimally topped with fresh cheeses.
