Catarratto Terre Siciliane IGT Tola
Tola's Catarratto is grown in Bosco Falconeria estates. It is a native Sicilian grape variety of ancient origins. After the harvest during the first decade of September and after grape destemming, the winemaking process involves must cold maceration on the skins at about 4 °C, with consequent soft pressing of the grapes and fermentation in thermo-controlled stainless steel tanks. The wine completes its aging in the bottle.
Tola's Catarratto has a bright yellow colour with greenish undertones. The bouquet offers a wide range of typical Sicilian scents of exotic fruit and citrus, especially grapefruit. The flavour is fresh, full and persistent. Serve cool at a temperature of about 9 °C.
FOOD MATCHING SUGGESTIONS
Tola's Catarratto is an excellent white wine to be enjoyed as aperitif or in combination with fish dishes in general.
