Barolo DOCG Cannubi F.lli Serio & Battista Borgogno
The Barolo Cannubi produced by Fratelli Serio & Battista Borgogno winery is made from 100% nebbiolo grapes, cultivated in the 3 vineyards located on the three side slopes in the heart of Cannubi village. Every year, we collect and separately vinified the three vineyards and, depending on the year, we choose the most appropriate cut. After 30-40 days of maceration in wooden tanks, the winemaking process continues with spontaneous malolactic fermentation in steel and consequently with aging in Slavonian oak barrels of 25-50 hl. (Garbellotto) about 30 months, while the Reserve about 52 months. Bottling normally takes place in Summer, placing the bottle in a horizontal position for about 6 months. All bottles are numbered on the label.
Ruby red colour, which tends towards the garnet tones over time. Its bouquet expresses a balance of notes of red fruits, spices, tobacco and wood. In the mouth it is round and well-balanced, with elegant, harmonious, silky tannins. Rich and velvety structure, that ends in a long and delicate finish. We recommend serving it in a large glass, at a temperature of 18-20 °C, taking care to uncork the bottle at least 30 minutes before serving.
FOOD MATCHING SUGGESTIONS
Barocco Cannubi Serio & Battista Borgogno elegantly matches with pasta with ragù (typical meat sauce), red meats, roasts, game, braised meat and aged cheese.
