Franciacorta DOCG Brut Ronco Calino
Ronco Calino's Franciacorta DOCG Brut is obtained from 80% Chardonnay and 20% Pinot Noir grapes, harvested by hand in the second decade of August, with careful selection of the bunches before soft pressing. The fermentation takes place in stainless steel tanks at a temperature of 15-16 °C. A small part of Chardonnay (about 20%) ferments in French oak barrels. The second fermentation is carried out through the Metodo Classico dictate and the wine completes its aging on the lees for at least 30 months before disgorgement.
It has a pale straw yellow colour with greenish undertones. The perlage is soft and continuous, with a good consistent foam. It opens to the nose with a fine and elegant bouquet made of fruity aromas, among which stand out pineapple, apple, pear, next to flowery notes of citrus fruits, acacia flowers, candied lemon zest, honey, bread crust and biscuit that fades into vanilla sensations. On the palate this Franciacorta is supported by good acidity, and an elegant and consistent structure, that closes into a long and persistent finish. The aftertaste confirms the olfactory bouquet, with fragrant notes of fruit and white flowers, combined with pleasant vegetal and vanilla hints. We suggest serving it at a temperature of 10-11 °C.
