THE BEST WINES FOR CURED MEAT

To get the right pairing between wine and cured meat, there is a thing to consider first: the flavour of cold cuts. In fact, cured meat is raw or cooked meat with the addition of salt, herbs, spices and sometimes animal fat. Raw and cooked ham, mortadella, salami are true delicacies and when you taste a selection of Italian cured meats, better recognize types and flavour degree. The more salted the ham is, the more it need to be pair with medium/light-bodied red wines, such as Marzemino, Pinot Nero or Chianti; the more the ham will tend to sweetness, the more it should be paired with structured and full-bodied white wines, such as Verdicchio dei Castelli di Jesi or Chardonnay. For mortadella, the ideal wine pairing is with the typical Lambrusco, but it pairs well also with Vernaccia di San Gimignano. With smoked cold cuts, like speck, prefer a bottle of Schiava, Teroldego or even a scented white wine, like Gewürztraminer, while with raw cold cuts, sush as local salami, ciauscolo (soft, spicy, slightly smoked sausage) or finocchiona (fennel seeds-flavoured salami), try light red wines such as Bonarda or Barbera d'Asti, without forgetting Sangiovese di Romagna. With the low-fat bresaola, taste a glass of Nebbiolo from Valtellina or even Bardolino. If you are a fan of Lardo di Colonnata (special fat from the pigs of Colonnata), you need a super degreasing-effect, so the best winepairing possible is a bubble, from Trentodoc to Franciacorta.
