THE IDEAL WINES TO PAIR WITH RISOTTO
Risotto and wine pairing depends on the ingredients that make up risotto. If your risotto is based on fish or seafood, then it is advisable to opt for a wine that expresses sweetness and flavour at the same time, such as Albana Secco, Vermentino or Friulano. For vegetables risottos, instead, you can enhance the dish with wines like Ribolla Gialla, Pinot Bianco or Chardonnay, without overwhelming the delicacy of the flavours of the veggie ingredient. For meat risotto, like “risotto all'isolana”, it is good to increase a little the tannic level, choosing a light red wine like Barbera or Venetian reds. If meat tends to be fat, not bad even Lambrusco. If the wine is used instead for creaming in cooking, there is a rule to keep in mind: preferring young wines refined in steel, so as to maintain the freshness of the risotto. A good exception? Risotto with Amarone.
