THE BEST WINES FOR RED MEAT

The lovers of the Italian "Fiorentina" t-bone steak will know that the ideal wines to combine with red meat are red wines. It is true, but only in general, with some minor exceptions. If we talk about red meat, we think of grilled beef. This type of meat cooked in this way is characterized by a marked "juiciness", defined by the exactness "succulence", given by the fatness of the meat. To dry the succulence we usually use a good tannic red wine, like a Chianti Classico. Fiorentina and Chianti ..what an execellent pairing, in fact! With very savoury meat which are characterized by a more pungent taste, like lamb or goat meat, it is better to combine them with more austere red wines: from Cannonau to Aglianico del Vulture, or even Nerello Mascalese or Montepulciano d'Abruzzo. For "stracotto" and "brasato" (types of Italian beef stews), which have long cooking times, the ideal wine pairing includes mature red wines with intense and fruity bouquets and good tannic structure, such as: Barolo, Amarone della Valpolicella, Barbera d'Alba, Sagrantino di Montefalco. With wild game such as wild boar, deer or roe deer, you can taste great red wines suitable for aging, the Reserves, taking care that they are able to offer a rich and complex taste-olfactory profile to withstand the taste of wild meat: Vino Nobile di Montepulciano, Chianti Classico Riserva, Brunello di Montalcino to give some examples. With feathered game, such as roast duck or guinea-fowl, select more delicate red wines like Schiava from Alto Adige or Pignolo from Friuli. For raw red meat, such as beef tartare or carpaccio, be careful about the dressing, which gives the dish more or less marked aromatic flavours. For example, with mustard-flavoured beef tartare, the best wines to pair are full-bodied aromatic white wines: Gewürztraminer is an excellent solution.
