Pigato Riviera Ligure di Ponente DOC
Pigato is one of the most famous white grape varieties of Liguria, along with Vermentino, which is very similar, so much so that there are those who claim to be the same grape. The name "Pigato" originates from the dialect word "pigau", meaning "speckled". This Pigato produced by Fontanacota winery is made from grapes grown in the Valle Prino upstream of Porto Maurizio, in the towns of Fontanacota and Cipressa (IM), on a small area of only 11,000 square meters of vines. After a manual harvest, grapes are subjected to cryomaceration at zero degrees for about 48 hours, followed by soft pressing and controlled fermentation at 18 °C of just the free-run must and it is activated by selected yeasts, lasting about 15-20 days. The obtained wine is refined in steel barrels for 5-6 months and a further one month in bottle.
Fontanacota's Pigato is a white wine with bright yellow colour and slightly aromatic flavour with notes of Mediterranean maquis and almond. Delicate perfumes. It is well-structured, harmonious and balanced. We suggest serving it fresh at 10-12 °C.

Fontanacota's Pigato Riviera Ligure di Ponente DOC is a white wine from Liguria with a dry and soft flavour, pleasantly almond on the finish, so it pairs well with not too seasoned white meats and fish dishes, as well as raw fish and grilled prawns. In addition, try Pigato wine in combination with traditional "trofie" pasta with Genovese pesto sauce or potatoes and string beans salad, which are typical dishes of Ligurian culinary tradition.
L'azienda agricola fontanacota, è nata nel 2001 da una realtà agricola già esistente. La struttura aziendale si compone attualmente di due distinte tenute, la più grande situata in Val Prino (IM) e la seconda a Pornassio in alta Valle Arroscia (IM).
