Chianti Classico DOCG Castellare di Castellina
Only native grape varieties for this Chianti Classico DOCG produced by the Tuscan winery Castellare di Castellina. The blend does not include either Cabernet or Merlot, but only 90% Sangiovese and 10% Canaiolo grapes, to maintain the traditional formula of one of the most famous Italian red wines. This Chianti Classico is a wine that seeks maximum elegance through typicality. The harvest usually takes place in October. The grapes are prepared for vinification in steel. After malolactic fermentation, the wine refines in 2.25 hl and 5 hl French oak barrels for about 7 months, followed by further 7 months of aging in bottle.
Castellare di Castellina's Chianti Classico has ruby red colour. The nose is fragrant, fresh with pleasant hints of red fruits, licorice, currants and a light touch of vanilla. On the palate it expresses a pleasant sweetness; it is round, soft and savory. Acidity and persistence characterize a very elegant aftertaste. We suggest serving it at a temperature of 17-18 °C.
This Chianti Classico is a very versatile red wine, pairing well with tasty all dishes typical of Chianti and Tuscan cuisine. Try it with grilled or stewed red meat, game and medium-aged cheese.
