Bottega Vinai Pinot Nero Trentino DOC
Pinot Noir is an international grape variety originating from Burgundy. Its natural habitat is on rather cold temperatures and hilly soils, between the 46th and 51st parallel lat. North, which includes Trentino in Italy. Cavit's Bottega Vinai Pinot Noir is produced with grapes grown on the hills of Trento, on moraine soils in the altitude range between 300 and 450 m asl. Vinification is carried out according to the traditional system with maceration and fermentation in contact with the skins for 7-8 days. After a short stay in stainless steel tanks it follows the refinement which for a part is carried out in barriques and partly in oak barrels, for a duration of 10-12 months.
Bottega Vinai Pinot Nero is ruby red in colour, with typical red-brick shades that are evident with prolonged aging. Presents very pronounced aromas of red fruits, in particular black cherry and jam, with hints of almond and vanilla notes. Rather impersonal if too young, it refines considerably over time due to its excellent structure, giving velvety sensations and powder of remarkable harmony. We suggest serving it at a temperature of 16-18 °C.
