Custoza DOC Cavalchina
Cavalchina's Custoza DOC is a white wine obtained from 40% Garganega, 30% Fernanda (Custoza clone), 15% Trebbiano and 15% Trebbianello (Friulano clone). Given the different periods of grapes maturation, the manual grape harvests are carried out in different time: in September for the Trebbianello, mid-September for Fernanda and early October for Trebbiano and Garganega. The grapes are de-stemmed and pressed. Fernanda has a semi-aromatic character and, therefore, are macerated for a few hours before crushing. The musts are clarified by static decanting and ferment on the lees for 10-15 days at a temperature of 16-17 °C until the definitive cuvée is ready.
This Custoza is a sinuous white wine in the glass. It has a straw yellow colour with greenish undertones. The nose is slightly aromatic, opening generously in the mouth with great balance and flavor. We suggest serving it at a temperature of 10-11 °C.

Cavalchina's Custoza DOC is an eclectic wine to taste as aperitif. Excellent also in combination with fish dishes, white meat and stuffed pasta.
Cavalchina is the name of the district where the winery is located, probably after the residence of the Conte Cavalchini. It is on the southeast border of the Garda amphitheatre dating from the end of the Ice Age. The Azienda Agricola Cavalchina was created in the early 1900s with the purchase of the first vineyards. Later the cellar was built and originally included a distillery, which was in use until 1967.
