Bardolino Chiaretto DOC Cavalchina
Cavalchina's Bardolino Chiaretto DOC is a rosé wine obtained from a short maceration of 60% Corvina, 35% Rondinella, 5% Molinara grapes. The grapes for the production of Bardolino Chiaretto are harvested a week earlier than those destined for the production of red wines. After a short pre-fermentative maceration of 12 hours at 8-10 °C, grapes' must is clarified by static decanting and ferments in steel for 10-15 days at a temperature of 17-18 °C. Malolactic fermentation is not performed and, after a brief stay on the yeasts, the wine is bottled.
Chiaretto di Cavalchina presents a delicate but captivating rosé colour, capable of expressing an interesting floral bouquet, with light fruity notes that anticipate a very balanced mouth, favoring savory and finely acid notes. We suggest serving it at a temperature of 10-11 °C.
FOOD MATCHING SUGGESTIONS
Cavalchina's Bardolino Chiaretto DOC pairs well with cold cuts, fish dishes, especially with shellfish, mixed fried fish and Japanese sushi. Given its good acid, it is also excellent with white meat.
Cavalchina is the name of the district where the winery is located, probably after the residence of the Conte Cavalchini. It is on the southeast border of the Garda amphitheatre dating from the end of the Ice Age. The Azienda Agricola Cavalchina was created in the early 1900s with the purchase of the first vineyards. Later the cellar was built and originally included a distillery, which was in use until 1967.
