Don Cosimo Primitivo Salento IGT
Don Cosimo is a Primitivo Salento IGT red wine produced by Due Palme winery. Primitivo, together with Negroamaro, represent the two most famous and requested red grape varieties in the Apulian wine scene. The Primitivo grapes destined for the production of Don Cosimo are harvested by hand and early, ready for maceration in horizontal rotary fermenters. The obtained wine evolves for 6 months in French oak barrels. This is followed by a further refinement in the bottle before being realesed.
Don Cosimo has an intense ruby red colour with cardinal red undertones. The nose is harmonious, with notes of ripe red fruit and slightly spicy aromas. Elegant and velvety taste, light acidity and very pleasant tannins. We suggest serving it at a temperature of 16-18 °C.

Don Cosimo Primitivo Salento IGT by Due Palme winery is an excellent Apulian red to pair with the typical dishes of the Salento tradition, such as orecchiette with ragù meat sauce or with aged pecorino cheese, such as Caciocavallo or Canestrato Pugliese DOP.

Cantine Due Palme
The Co-operative "Cantine Due Palme", was founded in 1989 in Cellino San Marco near Brindisi in the Puglia region. It was created thanks to the vison and the drive of Angelo Maci, who is the third generation in a family of winemakers.
Today, the company has 1200 growers who are members of the Co-operative. Its vineyards cover 2400 hectares between the provinces of Brindisi, Taranto and Lecce which are in the heart of the “Salento” region.
