Audax Zero.3 Prosecco Valdobbiadene Superiore DOCG Extra Brut Millesimato
Audax Zero.3 is part of the "Traditional" Prosecco collection signed by Bortolomiol. A Valdobbiadene Prosecco Superiore DOCG with a bold character, not surprisingly, with a sugar level approaching zero, fully respecting the consumption trend of today and at the same time also the vision and pioneering spirit of Giuliano Bortolomiol, who was the first to produce Prosecco di Valdobbiadene in Brut version. The Glera grapes are usually harvested in the second decade of September. After soft crushing, the must ferments at controlled temperatures with selected yeasts for about 2 months. This sparkling wine is made according to the Italian method, also called "Martinotti Method", or in a steel autoclave for a period ranging from 1 to 3 months.
The Extra Brut version of Valdobbiadene Prosecco Superiore DOCG is the natural expression of Glera grapes, which retains their delicate and aromatic bouquet. Audax Zero.3 is presented in a glass of a straw yellow colour, tending to greenish. The fine and continuous perlage promises notes of delicate white flowers. In the mouth it is dry, but velvety, round and recalls fresh fruit. We suggest serving it at a temperature of 6-8 °C.

Thanks to its sugar content tending to zero, Audax Zero.3 Prosecco Valdobbiadene Superiore DOCG Extra Brut Millesimato perfectly succeeds in degreasing the palate and is an excellent match for fish dishes. Perfect as an aperitif, it also goes very well with first courses and fried food.
