Pungirosa Bombino Nero Castel del Monte DOCG
With Pungirosa wine, the Apulian winery Rivera wanted to enhance the peculiar characteristics of the Bombino Nero variety, the most typical of the Castel del Monte area through the traditional "rosé" vinification. The area of grapes coming from Castel Del Monte is so suited to the production of rosé wines that it deserves the DOCG starting from the 2011 vintage. The grape harvest takes place the first days of October. The pressed grapes macerate with the skins for about 24 hours at 5-6 °C, in order to extract the typical colour and aroma of Bombino Nero. After the racking, the wine ferments at 18-20 °C for 12-14 days and ages 2-3 months in vitrified cement tanks.
It has a pink onion skin colour. The bouquet is delicate, characterized by notes of wild rose and cherry. In the mouth it is fresh and sapid; the sip is supported by a beautiful live fruit and is balanced by a delicate acidity: long and juicy finish. If well preserved, it can be enjoyed up to 2-3 years after harvest.

Pungirosa Bombino Nero Castel del Monte DOCG of Rivera, thanks to its soft and very delicate taste, is a very versatile rosé wine in pairings to most dishes, ideal both to be enojoyed together with fish dishes and delicate cured meat, fresh vegetables and soft cheese. Very interesting also as an aperitif.

Rivera winery was founded by Sebastiano de Corato in the late 1940s, inspired by a vision of realising, and bringing to the world's attention, the enormous viticultural potential of the Castel del Monte area. Widespread recognition quickly followed, and Rivera became the benchmark of Apulia wine production and the force driving its rebirth, thanks as well to innovations in both winemaking and vineyards introduced by his son Carlo.
