Valpolicella DOC Corte Giara
Allegrini's Corte Giara Valpolicella DOC is a Veneto red wine from Corvina made from 75% Corvina and 25% Rondinella grapes, cultivated in Valpolicella. After manual harvesting carried out in the first half of September, grapes are subjected to destimming and soft pressing before fermenting in stainless steel tanks at controlled temperature. The aging takes place in steel and lasts about 3 months, before a further refinement of another 2 months in the bottle.
Intense and inviting ruby red colour. On the nose, the typical cherry and pepper notes are exalted in this fresh version of Valpolicella DOC, followed by soft notes of officinal herbs. The palate is dry and well balanced. The traditional acidic vein mix perfectly in contrast with the fruity notes on the palate, giving the wine a slender and gritty profile. We recommend serving it at a temperature of 15-16 °C.
FOOD MATCHING SUGGESTIONS
