Domini Nero Trento DOC Brut Millesimato
Domini Nero Trento DOC Brut Millesimato is a great Traditional Method Trentodoc sparkling wine produced for the first time by Abate Nero winery with the 2008 vintage. A very demanding challenge to produce a Pinot Noir-based sparkling wine as in the great French tradition. Domini Nero is traditionally vinified in white, with soft pressing of the grapes and a first fermentation in steel. Second fermentation and refinement on selected yeasts for at least 60 months.
It has an intense straw yellow colour with golden undertones. Very fine and persistent perlage. The bouquet is fruity, fine and elegant. Notes of white peach and small red fruits emerge, accompanied by delicate hints of fresh mountain herbs and good minerality. A "vertical" wine, whose initial tactile sensations of minerality and freshness give way to increasingly fruity fragrances, persistent and in perfect harmony. We suggest serving it at a temperature of 6-8 °C.
FOOD MATCHING SUGGESTIONS
The aging on the yeasts for over 60 months only partially manages to tame the exuberance of this important Traditional Method sparkling wine. The mineral and particularly fresh features make it perfect for pairing with foods in which fatness and sweet tendency predominate, such as fish or meat risottos, gratin seafood, grilled and fried fish, but also cheese and cured meat.
ABATE NERO The name evokes the figure of a French abbot, but it is actually a traditional sparkling wine characteristic of the Trentino region.
