Colle Cervino Tintilia del Molise DOC
Colle Cervino is a red wine from Molise produced by Catabbo winery and obtained only from 100% Tintilia grapes, grown in San Martino in Pensilis. The harvest is usually carried out manually in the second decade of October. The grapes ferment in steel at a temperature of 25-28 °C for about 15-20 days. The wine obtained ages 12 months in steel before being bottle and completing its refinement.
This Tintilia has an intense ruby-red colour, with orange impenetrable hues. Notes of ripe red fruit, among which the cherry stands out, accompanied by light and elegant vegetal notes with a closure of dried flowers and licorice. The sip is warm, soft with soft tannins, which has already reached its elegance. In the mouth the spices return, in the long finish a last memory reaches us of a chocolate with liqueur cherry. We suggest serving it at a temperature of 17-18 ° C
